Cottage cheese combination

FreshQ® Cheese fermentation-enabled bioprotection cultures delay contaminant growth. This helps extend the shelf life of your cottage cheese, without adding unwanted ingredients to the product label. Combine FreshQ® Cheese with Novonesis’ DVS® Fresco® 1000NG cultures for a premium flavor and texture in your cottage cheese.

Soft cheese combination

    This culture system maintains a consistent, delicious and mild flavor through a longer shelf life. It helps to stabilize pH and avoid off-flavors including ammoniac and bitterness.  

    Its four cultures are made with carefully chosen bacterial strains for mild acidification.

    Novonesis’ Chy-Max® Special

    By balancing low proteolysis with high moisture content, Chy-Max® Special delivers on appearance and yield. In Brie and similar cheeses, it allows higher moisture content in the final product and supports stable texture and a white surface through shelf life.
