Novonesis Vertera® ProBite crosslinks amino acids in plant protein substrates such as pea or soy isolates and concentrates, creating a firm protein gel network. Vertera® ProBite can functionalize plant proteins in plant-based meat formulations. The enzyme can crosslink the amino acids lysine and glutamine in protein substrates e.g., pea or soy protein isolate, which creates a firm protein gel network.

The crosslinking of proteins via Vertera® ProBite significantly increases the hardness of plant-based meat products such as sausages, nuggets and burger patties. This results in a perfect texture and meat-like bite of plant-based meat products while at the same time enabling the elimination of methylcellulose and other hydrocolloids.

The achieved bite is stable across temperatures, meaning costumers can experience the perfect texture from unpacking the frozen or refrigerated patties to cooking and finally eating the product.

This product contains enzymes. While enzymes are safe to use in consumer applications, they need correct handling in working environments to ensure workers’ safety.

Indeed, repeated inhalation of enzyme dust or aerosols resulting from improper handling may induce sensitization and may cause allergic type 1 reactions in sensitized individuals.
