Novonesis Pectinex® Yieldmash Plus is a tailor-made mash enzyme used in both first and second mashing/pomace treatment. It selectively degrades pectin to provide lower mash and juice viscosity.  

In first mashing, it substantially increases juice yield in processing of fresh and stored apples. That gives you a better bottom line.  

In second mashing/pomace treatment it delivers the highest juice yields. That means you get more value from expensive fruits

With Pectinex® Yieldmash Plus in first mashing, you can speed up processing for increased capacity during peak juice season. It delivers lower mash and juice viscosity, faster free-run juice and reduced post- treatment. It also helps to extract insoluble pectin from the pomace.

How to use:

First mashing:

Add this product into the mill. Under normal conditions it has a temperature range of 23-27°C but its range can be 15-55°C.  It's active up to 55°C. However, higher temperatures may have a negative effect on aroma quality and analytical parameters. They may also lead to microbial problems. Avoid mash temperatures below 10°C.

Note on dosage for first mashing:  Increased dosage gives higher juice yields in the press. Dose the diluted product (ratio 1:10 in tap water) into the mill using a dosage pump, or dose it directly into the mash holding tank.

Second mashing/pomace treatment: 

Use this product at 53-55°C, as lower temperatures increase the risk of microbial problems. The enzyme is also active at temperatures up to 60°C, but temperatures above 60°C are difficult to control in the plant.

This product contains enzymes. While enzymes are safe to use in consumer applications, they need correct handling in working environments to ensure workers’ safety.

Indeed, repeated inhalation of enzyme dust or aerosols resulting from improper handling may induce sensitization and may cause allergic type 1 reactions in sensitized individuals.
