Unlock cheese yield improvements across a range of Cheddar cheese types. For traditional Cheddars, choose a combination of Novonesis’ Easy-Set® RST-1000 and Novonesis’ Microlant Supreme.     Chy-Max® M coagulant

    The more specific a coagulant, the more protein the cheese matrix retains. Higher protein retention means a better protein network which results in lower water loss in whey drainage. The result is higher cheese yields. Its high specificity allows Chy-Max® M to deliver cheese yield improvements of up to 1.2%.
